I LOVE this theme, but has ANY easier way been developed so as to not have to create a separate post for every photo i want to display? I have 100s of photos and therefore have to create 100s of posts which is very tedious and time consuming.

Hi Lisa,
Unfortunately no, Fotofolio not intended to works as photo gallery, but it more to show your bests with ease within wordpress.
But, if you like, you can install a plugin called nextGen to help you more with images works with most theme, including fotofolio.
